The Ritual Begins Before the First Sip

Preparing matcha is not just making a drink. It is a ritual of presence — an intentional pause in the middle of the day. And like any ritual, it has its steps, its proportions and its little secrets that make all the difference between a bitter matcha and one that will win you over.

What You Need

  • Quality ceremonial matcha — first harvest, shade-grown
  • Chawan — the traditional Japanese bowl
  • Chasen — the bamboo whisk with 80 to 120 tines
  • Chashaku — the bamboo spoon for measuring the powder
  • Fine sieve (optional but recommended)
  • Water between 70°C and 80°C — never boiling

Step by Step: Traditional Method (Usucha)

1. Pre-warm the bowl

Pour a little hot water into the chawan, gently whisk with the chasen to soften the bamboo tines, then discard the water. Dry the bowl well.

2. Sift the matcha

Use 1.5 to 2 chashaku (about 2g) of matcha and sift directly into the bowl. This step eliminates lumps and ensures a silky texture.

3. Water temperature matters a lot

Heat water to 70 to 80°C. Boiling water destroys the active compounds and makes matcha bitter. Without a thermometer, bring to a boil and wait 5 to 6 minutes.

4. Add water to the powder — never the other way around

Pour about 60 to 70ml of water over the matcha powder. Starting with a little water helps create a uniform paste before diluting.

5. Whisk in a W shape — not in circles

With the chasen, whisk in rapid W or M shaped movements. The goal is to create a fine, even foam on the surface. 20 to 30 seconds is enough.

6. Serve and drink immediately

Matcha doesn't wait. Drink as soon as you prepare it to enjoy the aromas and foam at their best.
